Pumpkin Pie Eclairs

I just realized that I haven’t posted any actual recipes on my blog! Well I better start adding some then. The story behind this recipe is that I wanted to make some that really impresses people. Something that really has the “wow” factor. Something like…Eclairs! More specifically Pumpkin Pie Eclairs.

Éclairs are a great classical and traditional (not to mention delicious) dessert. Since fall is already here (with winter on its tails) , I decided to jazz up the classic éclair with some fun fall flavors before its too late. I got a fantastic pate a choux recipe (the dough for the eclairs) and to put a twist on things, I added some delicious pumpkin pie. Pumpkin Pie Eclairs are the perfect light dessert after your holiday meal.

Ready for Thanksgiving?

Ahhh I feel my refrigerator’s pain! We bought our turkey today at a discounted price (buy a certain dollar amount and get your turkey for less than $.50 a pound). I have to say we got a pretty heavy one. This Thanksgiving is sure to give my kitchen a workout. We’ve haven’t finalized a menu yet but I have some ideas. I mean who doesn’t love pumpkin pie?

Yesterday, I bought some Ghirardelli’s Baking Bars at a wholesale store for a fraction of the regular price. What a bargain! So today I decided to use some at last. The special recipe that used these precious chocolate? Truffles of course. I have to admit since it was my first time trying to make truffles, I did struggle. However, you know what they say- learn from your mistakes. I’ve gathered all the information and tips I learned and made a top ten list for you (remember to say where you got your tips from 😉

This is a picture of the rings I made with the leftover Sugru from the Hallow-Rings: The Perfect Halloween Accessory project. It was really fun shopping around various craft stores looking for the ring add-ons for the rings. So many things to choose from!
